Brown Rice Risotto Recipe

This is a very easy brown rice risotto recipe that tastes delicious and can be served either by itself or as a side dish. This recipe yields 4 servings.

Ingredients:

  • 200g brown rice, washed
  • 3-4 mushrooms, chopped
  • 1 medium onion
  • 1/2 red pepper, chopped
  • 200g sunflower seeds
  • 100g sweet corn or frozen peas
  • 1 teaspoon Marmite
  • 400ml water
  • soy sauce to taste
  • mixed herbs to toss
  • a pinch of salt

Directions:

  1. In a pot, cook onion in oil and add washed and drained rice.
  2. Mix 400ml of hot water with soy sauce, Marmite, and mixed herbs. Add to the rice.
  3. Bring to a boil and let simmer.
  4. After 15 minutes, add the chopped mushrooms sweet corn or frozen peas. Let simmer for another 20-25 minutes or until rice is cooked.
  5. Season with salt and top with sunflower seeds and chopped red pepper. Serve immediately.
