Brown Rice Risotto Recipe
This is a very easy brown rice risotto recipe that tastes delicious and can be served either by itself or as a side dish. This recipe yields 4 servings.
Ingredients:
- 200g brown rice, washed
- 3-4 mushrooms, chopped
- 1 medium onion
- 1/2 red pepper, chopped
- 200g sunflower seeds
- 100g sweet corn or frozen peas
- 1 teaspoon Marmite
- 400ml water
- soy sauce to taste
- mixed herbs to toss
- a pinch of salt
Directions:
- In a pot, cook onion in oil and add washed and drained rice.
- Mix 400ml of hot water with soy sauce, Marmite, and mixed herbs. Add to the rice.
- Bring to a boil and let simmer.
- After 15 minutes, add the chopped mushrooms sweet corn or frozen peas. Let simmer for another 20-25 minutes or until rice is cooked.
- Season with salt and top with sunflower seeds and chopped red pepper. Serve immediately.
