Candied Sweet Potatoes
Sweet potatoes are always delicious and also much healthier than regular potatoes. These crispy candied sweet potatoes are quick and easy to make. This recipe yields 8 servings.
Ingredients:
- 6 large sweet potatoes
- 3/4 cup dark brown sugar
- 1/2 cup water
- 2 tablespoons butter
- 1 pinch salt
- 1 pinch ground ginger
Directions:
- In a large pan, bring sweet potatoes and cold water to a boil and cook for 10 minutes.
- Remove potatoes from water and place in cold water to stop cooking. When cool enough, peel and discard the skin.
- Slice potatoes into thick slices or chunks and refrigerate.
- In a large skillet, melt butter and and water, brown sugar, salt and ginger.
- Bring mixture to a simmer and add half of potato slices in one layer. Cook over medium heat at a slow boil until potatoes and crisp and brown around edges. Do the same for the other side.
- Remove potatoes when done and add next batch. Serve immediately.
