Candied Sweet Potatoes

Sweet potatoes are always delicious and also much healthier than regular potatoes. These crispy candied sweet potatoes are quick and easy to make. This recipe yields 8 servings.

Ingredients:

  • 6 large sweet potatoes
  • 3/4 cup dark brown sugar
  • 1/2 cup water
  • 2 tablespoons butter
  • 1 pinch salt
  • 1 pinch ground ginger

Directions:

  1. In a large pan, bring sweet potatoes and cold water to a boil and cook for 10 minutes.
  2. Remove potatoes from water and place in cold water to stop cooking. When cool enough, peel and discard the skin.
  3. Slice potatoes into thick slices or chunks and refrigerate.
  4. In a large skillet, melt butter and and water, brown sugar, salt and ginger.
  5. Bring mixture to a simmer and add half of potato slices in one layer. Cook over medium heat at a slow boil until potatoes and crisp and brown around edges. Do the same for the other side.
  6. Remove potatoes when done and add next batch. Serve immediately.
