Delicious Cranberry Spinach Salad

I found this recipe a while back and everyone raved about it…it’s absolutely delicious!

Ingredients:

  • 1 pound spinach, rinsed, and torn into pieces
  • 1 cup dried cranberries
  • 1/2 cup white sugar
  • 1/2 cup vegetable oil
  • 1/4 cup white wine vinegar
  • 1/4 cup cider vinegar
  • 3/4 cup almonds, blanched and slivered
  • 2 tablespoons toasted sesame seeds
  • 1 tablespoon butter
  • 1 tablespoon poppy seeds
  • 2 teaspoons minced onion
  • 1/4 teaspoon paprika

Directions:

  1. In a medium pan, melt butter over medium heat and add almonds cooking until lightly toasted. Remove from heat and let cool.
  2. In a large bowl, combine spinach, cranberries, and toasted almonds.
  3. In another bowl, mix together sesame seeds, poppy seeds, onion, sugar, paprika, whine wine vinegar, cider vinegar, and vegetable oil.
  4. Toss with spinach just before serving.
