Delicious Cranberry Spinach Salad
I found this recipe a while back and everyone raved about it…it’s absolutely delicious!
Ingredients:
- 1 pound spinach, rinsed, and torn into pieces
- 1 cup dried cranberries
- 1/2 cup white sugar
- 1/2 cup vegetable oil
- 1/4 cup white wine vinegar
- 1/4 cup cider vinegar
- 3/4 cup almonds, blanched and slivered
- 2 tablespoons toasted sesame seeds
- 1 tablespoon butter
- 1 tablespoon poppy seeds
- 2 teaspoons minced onion
- 1/4 teaspoon paprika
Directions:
- In a medium pan, melt butter over medium heat and add almonds cooking until lightly toasted. Remove from heat and let cool.
- In a large bowl, combine spinach, cranberries, and toasted almonds.
- In another bowl, mix together sesame seeds, poppy seeds, onion, sugar, paprika, whine wine vinegar, cider vinegar, and vegetable oil.
- Toss with spinach just before serving.
