Delicious Potato Casserole
This is one of my favorite recipes as it’s easy to make and absolutely delicious. This recipe yields around 8 servings.
Ingredients:
- 6 medium potatoes
- 1 pint sour cream
- 1 1/2 cups shredded Cheddar cheese
- 1/3 cup chopped green onion
- 1/4 cup butter
- 1 can condensed cream of mushroom soup
- 1/2 cup crushed cornflakes cereal
- 2 tablespoons melted butter
Directions:
- Preheat oven to 350F/175C and lightly grease a 2 1/2 quart casserole dish.
- Place potatoes (skin on) in a large pot of boiling water and cook for 25-30 minutes. Strain potatoes, and, when cool enough, peel skin off and grate into a medium bowl.
- In a large skillet over medium heat melt 1/4 cup butter then stir in soup until it starts to bubble.
- Remove soup from stove and mix in sour cream, green onion, and cheese. Stir in potatoes and pour mixture into casserole dish.
- In a resealable bag, shake cornflake crumbs and 2 tablespoons of melted butter and pour over casserole.
- Bake for 45 minutes and serve.
