Delicious Potato Casserole

This is one of my favorite recipes as it’s easy to make and absolutely delicious. This recipe yields around 8 servings.

Ingredients:

  • 6 medium potatoes
  • 1 pint sour cream
  • 1 1/2 cups shredded Cheddar cheese
  • 1/3 cup chopped green onion
  • 1/4 cup butter
  • 1 can condensed cream of mushroom soup
  • 1/2 cup crushed cornflakes cereal
  • 2 tablespoons melted butter

Directions:

  1. Preheat oven to 350F/175C and lightly grease a 2 1/2 quart casserole dish.
  2. Place potatoes (skin on) in a large pot of boiling water and cook for 25-30 minutes. Strain potatoes, and, when cool enough, peel skin off and grate into a medium bowl.
  3. In a large skillet over medium heat melt 1/4 cup butter then stir in soup until it starts to bubble.
  4. Remove soup from stove and mix in sour cream, green onion, and cheese. Stir in potatoes and pour mixture into casserole dish.
  5. In a resealable bag, shake cornflake crumbs and 2 tablespoons of melted butter and pour over casserole.
  6. Bake for 45 minutes and serve.
