Delicious Spaghetti Squash

This is an easy spaghetti squash recipe that is very filling and satisfying. This recipe yields about  6 servings.

Ingredients:

  • 1 spaghetti squash, cut in half, lengthwise and seeded
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 1/2 cups chopped tomatoes
  • 3 tablespoons sliced black olives
  • 2 tablespoons vegetable oil
  • 3/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh basil

Directions:

  1. Preheat oven to 350F/175C and lightly grease a baking sheet.
  2. Place the spaghetti squash cut side down and bake on sheet for about 30 minutes or until knife inserted with little resistance. Remove from oven and set aside to cool.
  3. In a skillet, heat oil on medium heat. Saute onion until tender. Add garlic and saute for 2-3 minutes. Stir in tomatoes just until they are warm.
  4. Scoop out the squash pulp and place in medium bowl. Toss with sauteed veggies, feta cheese, olives, and basil.  Serve immediately.
