Delicious Spaghetti Squash
This is an easy spaghetti squash recipe that is very filling and satisfying. This recipe yields about 6 servings.
Ingredients:
- 1 spaghetti squash, cut in half, lengthwise and seeded
- 1 onion, chopped
- 1 clove garlic, minced
- 1 1/2 cups chopped tomatoes
- 3 tablespoons sliced black olives
- 2 tablespoons vegetable oil
- 3/4 cup crumbled feta cheese
- 2 tablespoons chopped fresh basil
Directions:
- Preheat oven to 350F/175C and lightly grease a baking sheet.
- Place the spaghetti squash cut side down and bake on sheet for about 30 minutes or until knife inserted with little resistance. Remove from oven and set aside to cool.
- In a skillet, heat oil on medium heat. Saute onion until tender. Add garlic and saute for 2-3 minutes. Stir in tomatoes just until they are warm.
- Scoop out the squash pulp and place in medium bowl. Toss with sauteed veggies, feta cheese, olives, and basil. Serve immediately.
