Roasted Grapes and Carrots Recipe

This is a delicious vegetarian dish that you can either use as a main course or as a side dish. It’s easy to make, takes almost no time, and is sure to please even those that aren’t vegetarian! This recipe yields 8 servings.

Ingredients:

  • 2 pounds red seedless grapes
  • 1 pack baby carrots, peeled and cut into cubes
  • 1 red onion, peeled and cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin

Directions:

  1. Preheat oven to 375F/190C. Take a baking sheet and line it with aluminum foil.
  2. In a medium bowl, toss together the carrots, grapes, and onion in the olive oil. Sprinkle with cumin and mix well, ensuring vegetables are coated.
  3. Lay the mixture out onto the sheet.
  4. Bake in oven for 15-20 minutes or until carrots are soft.
