Roasted Grapes and Carrots Recipe
This is a delicious vegetarian dish that you can either use as a main course or as a side dish. It’s easy to make, takes almost no time, and is sure to please even those that aren’t vegetarian! This recipe yields 8 servings.
Ingredients:
- 2 pounds red seedless grapes
- 1 pack baby carrots, peeled and cut into cubes
- 1 red onion, peeled and cut into wedges
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
Directions:
- Preheat oven to 375F/190C. Take a baking sheet and line it with aluminum foil.
- In a medium bowl, toss together the carrots, grapes, and onion in the olive oil. Sprinkle with cumin and mix well, ensuring vegetables are coated.
- Lay the mixture out onto the sheet.
- Bake in oven for 15-20 minutes or until carrots are soft.
