Stuffed Mushrooms Recipe
This is an easy stuffed mushrooms recipe that is great as an appetizer or even as a main course.
Ingredients:
- 10 mushrooms
- 1 onion
- 1 carrot
- 1/3 pound squash
Directions:
- Preheat oven to 400F/205C.
- In a small bowl, shred carrot and squash. Chop onion and mix together in bowl.
- Remove mushroom stalks and chop them in tiny little bits, mixing them with the carrots, squash and onion.
- In a pan over medium heat, sautee the veggies for about 10 minutes.
- Brush the mushroom caps with olive oil and sautee with veggies for 1 minute.
- Remove pan from heat and stuff mushrooms with veggies.
- Bake in preheated oven for 15-20 minutes.
