Stuffed Mushrooms Recipe

This is an easy stuffed mushrooms recipe that is great as an appetizer or even as a main course.

Ingredients:

  • 10 mushrooms
  • 1 onion
  • 1 carrot
  • 1/3 pound squash

Directions:

  1. Preheat oven to 400F/205C.
  2. In a small bowl, shred carrot and squash. Chop onion and mix together in bowl.
  3. Remove mushroom stalks and chop them in tiny little bits, mixing them with the carrots, squash and onion.
  4. In a pan over medium heat, sautee the veggies for about 10 minutes.
  5. Brush the mushroom caps with olive oil and sautee with veggies for 1 minute.
  6. Remove pan from heat and stuff mushrooms with veggies.
  7. Bake in preheated oven for 15-20 minutes.
