Tomato Basil Quiche
This is a delicious and refreshing tomato basil quiche recipe that takes just 15 minutes to prepare. This recipe yields 10 servings.
Ingredients:
- 1 unbaked pastry shell
- 1 cup chopped onion
- 2 garlic cloves, chopped
- 1 teaspoon olive oil
- 8 ounces part-skim mozzarella, shredded
- 1 cup cherry tomatoes, cut in half
- 1/4 cup fresh basil, chopped
- 1 cup evaporated skim milk
- 1 1/2 teaspoon cornstarch
- 1/4 teaspoon fresh ground pepper
- 3 eggs
Directions:
- Place pastry in 10-inch deep dish pie pan.
- Saute garlic and onion in olive oil until golden.
- Spread sauted mixture over pastry and top with cheese.
- Arrange tomatoes over cheese in a single layer.
- Arrange chopped basil over tomatoes.
- In a blender, combine remaining ingredients and blend well.
- Slowly pour over pie.
- Preheat oven at 350F/175C and bake for 45 minutes or until toothpick inserted comes out clean.
- Remove from oven and let cool for 10 minutes before serving.
