Tomato Basil Quiche

This is a delicious and refreshing tomato basil quiche recipe that takes just 15 minutes to prepare. This recipe yields 10 servings.

Ingredients:

  • 1 unbaked pastry shell
  • 1 cup chopped onion
  • 2 garlic cloves, chopped
  • 1 teaspoon olive oil
  • 8 ounces part-skim mozzarella, shredded
  • 1 cup cherry tomatoes, cut in half
  • 1/4 cup fresh basil, chopped
  • 1 cup evaporated skim milk
  • 1 1/2 teaspoon cornstarch
  • 1/4 teaspoon fresh ground pepper
  • 3 eggs

Directions:

  1. Place pastry in 10-inch deep dish pie pan.
  2. Saute garlic and onion in olive oil until golden.
  3. Spread sauted mixture over pastry and top with cheese.
  4. Arrange tomatoes over cheese in a single layer.
  5. Arrange chopped basil over tomatoes.
  6. In a blender, combine remaining ingredients and blend well.
  7. Slowly pour over pie.
  8. Preheat oven at 350F/175C and bake for 45 minutes or until toothpick inserted comes out clean.
  9. Remove from oven and let cool for 10 minutes before serving.
