Zucchini Carrot Bread

This is a delicious zucchini carrot bread recipe that everyone will love, not to mention it’s super easy to make!

Ingredients:

  • 1 1/2 cupss grated zucchini
  • 1 1/2 cups grated carrots
  • 1 cup applesauce
  • 3 cups whole wheat flour
  • 1 1/2 cups succanat
  • 1/4 walnut oil
  • 1 cup soy yogurt
  • 1/2 cup walnuts
  • 1/2 cup raisins
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 2 teaspoons powdered ginger
  • 1/2 teaspoon sea salt

Directions:

  1. Preheat oven to 350F/175C.
  2. In a large bowl, combine grated carrots and zucchini. Add applesauce, soy yogurt and walnut oil. Mix well.
  3. In another bowl, sift together the flour, baking soda, salt, cinnamon, and dried ginger.
  4. Add the mixture to the carrot and zucchini mixture and blend well. Add the walnuts and raisins.
  5. Pour this mixture into 2 lightly oiled loaf pans.
  6. Bake in the middle of oven for about 25 minutes, or until toothpick inserted comes out clean.
  7. Let the loaves cool before slicing them.
