Zucchini Carrot Bread
This is a delicious zucchini carrot bread recipe that everyone will love, not to mention it’s super easy to make!
Ingredients:
- 1 1/2 cupss grated zucchini
- 1 1/2 cups grated carrots
- 1 cup applesauce
- 3 cups whole wheat flour
- 1 1/2 cups succanat
- 1/4 walnut oil
- 1 cup soy yogurt
- 1/2 cup walnuts
- 1/2 cup raisins
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 2 teaspoons powdered ginger
- 1/2 teaspoon sea salt
Directions:
- Preheat oven to 350F/175C.
- In a large bowl, combine grated carrots and zucchini. Add applesauce, soy yogurt and walnut oil. Mix well.
- In another bowl, sift together the flour, baking soda, salt, cinnamon, and dried ginger.
- Add the mixture to the carrot and zucchini mixture and blend well. Add the walnuts and raisins.
- Pour this mixture into 2 lightly oiled loaf pans.
- Bake in the middle of oven for about 25 minutes, or until toothpick inserted comes out clean.
- Let the loaves cool before slicing them.
